Peach & Basil Flatbread

Less of a recipe and more of a suggestion for the glorious combination that is peaches and basil. I like to use store-bought refrigerated pizza dough as my flatbread base, but a prepared pizza crust, naan, or other flatbread works too!

Ingredients:

Bread base of your choice

basil pesto

2-3 ounces goat cheese

2-3 ounces shredded mozzarella and/or grated parmesan

1-2 fresh ripe peaches

2-3 Tablespoons balsamic glaze reduction

Build your flatbread as follows:

  1. Lay down a base of basil pesto. For a small flatbread, it’s a few tablespoons. For a pizza, more like 1/3 of a cup. Spread evenly over your bread/dough.

  2. Sprinkle on some crumbled goat cheese and a little mozzarella or parmesan. Light on the cheese - it’s an important player here, but not the star.

  3. Top with thinly sliced peaches and bake according to the package directions.

  4. Remove from oven and drizzle with balsamic glaze reduction and a little fresh ground black pepper.
