Peach & Basil Flatbread
Less of a recipe and more of a suggestion for the glorious combination that is peaches and basil. I like to use store-bought refrigerated pizza dough as my flatbread base, but a prepared pizza crust, naan, or other flatbread works too!
Ingredients:
Bread base of your choice
basil pesto
2-3 ounces goat cheese
2-3 ounces shredded mozzarella and/or grated parmesan
1-2 fresh ripe peaches
2-3 Tablespoons balsamic glaze reduction
Build your flatbread as follows:
Lay down a base of basil pesto. For a small flatbread, it’s a few tablespoons. For a pizza, more like 1/3 of a cup. Spread evenly over your bread/dough.
Sprinkle on some crumbled goat cheese and a little mozzarella or parmesan. Light on the cheese - it’s an important player here, but not the star.
Top with thinly sliced peaches and bake according to the package directions.
Remove from oven and drizzle with balsamic glaze reduction and a little fresh ground black pepper.
