Beet & Cabbage Salad
Ingredients:
3 cooked, peeled beets (cooled)
1/2 head of cabbage
2 T olive oil
2T rice vinegar or red wine vinegar
salt, pepper and sugar to taste (probably just a pinch of each)
a handful of finely chopped fresh herbs, or 1/2 teaspoon celery seeds, or 1/2 teaspoon toasted caraway seeds
Directions:
Grate the beets and the cabbage and add to a bowl. In a separate, small bowl, whisk together the olive oil, vinegar, salt, pepper, and sugar until the sugar is dissolved. Add in your herbs or seeds. Pour the dressing over the beets & cabbage and stir to combine. Serve immediately or refrigerate.
