Agua de Pepino (Cucumber Agua Fresca)
Ever tried an agua fresca? These Mexican beverages are made simply with a blend of fresh fruit, water, and sweetener. This agua de pepino is a great way to use up large cucumbers.
Ingredients:
2-3 cucumbers, washed and quartered (I leave most of the peel on for a nice green color)
Juice of 1-2 limes
About 6 cups of water
Sweetener to taste (sugar, simple syrup, agave)
Directions:
Place the cucumbers and 3 to 4 c. water in a blender and blend until smooth. Strain the mixture into a large pitcher. Stir in the remaining water, the lime juice, and your sweetener. Adjust to taste. Serve over ice with a sprig of mint. Keeps in the refrigerator for about 3 days.
