Arugula Pesto

The bright peppery flavor of fresh arugula makes a great pesto. Enjoy it on pasta, as a veggie dip, use it as the base of a green goddess dressing, etc.

Ingredients:

2 nice handfuls of arugula (about 2-3 cups)

1/3 cup olive oil

1/2 cups nuts or seeds (walnuts, pistachios, pumpkin, or sunflower - toasted is even better)

small clove of garlic

pinch of salt, to taste

1/2 cup grated parmesan cheese or nutritional yeast

Directions: place first 5 ingredients into a blender or food processor and pulse until your desired texture is achieved. Remove pesto into a bowl, stir in parmesan or nutritional yeast. Check for seasoning, adjust as needed, and enjoy. Store in refrigerator.
