Sautéed Raab, Delicata, and Nardellos
The slightly bitter raab, sweet nardellos, and nutty delicata unite to perfectly balance the flavors of this dish. Kale also works well as a substitute for the raab.
Ingredients:
one small red onion, diced
2 cloves garlic, minced
One bunch of broccoli raab, washed and roughly chopped
4-5 Jimmy Nardello peppers, roughly chopped (and remove most seeds, but don’t stress over getting all of them)
One roasted delicata squash, cubed
1-2 Tablespoons olive oil or other cooking oil of your choice
salt and pepper to taste
Directions:
In a medium pan, sauté the diced onions in the olive oil on medium heat. Season with salt and pepper. When the onions are translucent, add the nardellos and continue to cook on medium/medium-low until softened. Add minced garlic and broccoli raab. Stir to combine. Check for seasoning and add as needed. Continue to stir until all the raab is wilted. Add warm, cubed squash and serve.
Optional add-ins: this is great with some crumbled bacon added at the end, or a little bit of a soft cheese like goat cheese or fromage blanc.Jack Goldenberg
